You have to remember that Ed and Al haven't told Winry about their suspicions about the homunculi. It's related to the military, and Ed does his best to protect Winry from anything that might hurt her - hence the reason he wasn't planning on telling her about what happened to her parents until she overheard him yelling at Scar. So as far as Winry (and the rest of Amestris) is concerned, Bradley is the ruler of their country, and he's taking time out of his day to sit with her and talk with her because he has a lot of respect for Edward, who's the youngest State Alchemist in history. He's also *really* damn good at putting on a front of being this kindly, benign leader. It's so much fun to go back through this show after you've watched it once and look for all the clues that the creator dropped that tells about Bradley's true identity before it's revealed in episode 14, and then just watch how subtly the voice actor and the animation work together to mislead the other characters. Also, think back to what we learned from Ling about how his country is set up. He said there were 50 different clans, with one emperor over all of them. The daughter of each clan's chief becomes one of the emperor's wives and has children for him. The current emperor has 19 daughters and 24 sons. So Ling is from the Yao clan and is the 12th born, and May is from the Chang clan.

Oh I can definitely imagine there being so many tiny clues and things you see differently when you rewatch the show! That's still a while off for me ;) but I look forward to doing that at some point!

Not sure how you feel about spoilers in intros but there's kind of a "big one" in the next OP, but only for the first two episodes it plays(27-28) since the thing occurs in Ep. 28. Speaking of Ep. 27 it's a pseudo filler/recap episode but it adds a lot of character context so I don't recommend skipping it. It's also the only Ep. that can really be considered "filler" in the show.
