I often have leftover bolognaise and tortillas, but I never thought of doing this! Genius!

I made this on the weekend, was brill! I tripled the recipe and had a tonne left over, which I made tonight, substituting the mozza with shaved parmesan (I used fresh mozza the first time and it just didn't have the punch I was hoping for) and adding sour cream after baking — highly recommended!
