Bit surprised that Toph didn't cover herself in jade – besides that it would have finished off the Primary Color Quartet (red, yellow, green, blue), jade also has more cultural significance to the Chinese mindset than gold does.

While she probably could, I suspect she won't even try to. After all, she just recently ESCAPED from one "petrification" – one that she DIDN'T have any control in – and now she's willingly subjecting herself (and the others) to it again. Pretty sure she's developed some flavor of Stockholm regarding the experience.
