Making this comment before watching this, but this show keeps doing things i dislike and things i love in the same episode lol. I dislike Bumi's characterization, but I loooved all of the Iroh and Zuko backstory

oh and i really loved the cave singers too lol. Also with Bumi, I do think the actor did good at getting his mannerisms and speech down

Even in the cartoon when the badgermoles showed up they almost attacked Sokka. It was when he bumped against one of the instruments and it made a strumming sound that they realized they could pacify them with music

I'm only partway through the reaction, so you might add on to your thoughts later. My thought is that Iroh was challenging the Earth Kingdom soldier not because that's what he believed -- but because the nicest thing to do for that guy now is to let him keep on hating him. At this point, hating Iroh/the Fire Nation is what he has, it's what keeps him going. Realizing Iroh is a person who has experienced loss wouldn't help him deal with the loss of his brother. It would only muddy his feelings.
