I think the baptism is more of a pride thing. Mrs. Coulter (and the Magisterium?) helped Iofur, so increased recognition by the Magisterium seems to have value to Iofur personally.

Because you wondered about it several times: We have seen Pan and other daemons talk to other humans several times. Farder Coram talked to Pan on the boat last episode, when they talked about the final form of daemons. I think you just missed it. From what I remember of the books, talking to another daemon directly is pretty rare and touching another daemon is a huge and terrible taboo and never ever happens (you would literally be touching another persons soul). If you keep in mind, that daemons are human souls, then Ms. Coulters treatment of her own daemon and how she uses it to attack other people's daemons is very bizarre and destructive. No one else is doing that.

Thank you, idk how I missed it. The way Ms. Coulter treats her Daemon is always so interesting to see, I wonder if it goes along the lines of self hatred with how she hits it or if its just that her hatred for dust runs that deep that she sees her Daemon as the living embodyment of it.
