The Hero of the South was actually way stronger than Himmel. I'd bet he could take on Himmel's whole party and win. In the end it wasn't a great and mighty hero with a magic sword or an all-powerful spell that defeated the demon king, it was a fake hero, a cowardly warrior, a drunken priest, and a mage of a peaceful era that could do it.

I like to think that the goddess of Frieren’s universe is more involved in the story than we think in the aspect of “coïncidences” and blessing. She has probably blessed a human child with the ability of foresight to counter Schlacht's own abilities (probably the worst matchup for any party in Frieren’s universe aside from him). And the goat of the south has probably understood his duty and fate when the time has come. She probably paved the way for Flame by coincidentally finding Frieren at the brink of death following the demon’s attack on her elf village.

Based on how magic works in Frieren, what the apple spell does probably depends on the caster. If you can only imagine changing the color, then it will just change the color. If you can imagine changing even the flavor to a green apple, you'll truly have a green apple. Depending on the caster, there'd be complexity about what a "red apple" even is. Is an unripe red apple still a red apple or is it a green apple? Can you unripen a red apple by turning it green? Endless possibilities.
