On a project/youtube car like this, I wouldn't worry. On a family truckster that's going to be used all year round for many years, yes then I would put the shield back on.

Maybe, but I feel that a missing bit on one side would drive me crazy because of latent OCD or something.

You can’t really see it behind the wheel. And even if you could how often do you look closely behind the rotors of the wheel.
